Food Regulations Draw Ire

Disappointment, regarding federal oversight of school lunches, is voiced during Monday night's meeting of the USD 430 Board of Education, with new guidelines now received.
Doctor Steve Davies, Superintendent for the South Brown County Schools, says the requirements, and what students will actually eat, simply don't match, leaving concerns that food will be wasted(Play Audio :24 seconds)
The long discussed guidelines, now slowly being implemented, are intended to provide healthier student meals, specifying such details as what color of vegetable must be served when.
Davies says a concern also arises in the way the change is being implemented, with specifics not yet in place. That leaves the district at a disadvantage as their deadline to order food for the next school year is fast approaching; and, if that timeline is missed, the district will lose out on gaining a low bid for food service, meaning an extra cost to the district.
School lunch menus must be certified by October First; but with new regulations in effect, but no specific guidelines received, Davies says meeting that date will be a difficult maneuver.
